i watched vids of the song and the vid of the game by that guy in the OP, I can say, as an advanced guitar player and shredder, the game would be almost impossible to me. they are two totally different skills and the guitar is not that hard, most of the song except for a few parts is slow. it's just a bit of sweep picking and tapping. when you develop these skills you can do it while sleeping. really fast shredding looks harder than it is, it takes almost no effort.

Have you played the game? It seems overwhelming because it's only 5 buttons and all the notes on top of each other unlike the guitar. Of course you need practice to get the hang of it and the little skills that are needed and I don't deny that it requires skill and coordination, but it's not on par with performing musicians reading a sheet music. If we mix video games with music performance, Rocksmith at least teaches you how to play an actual guitar and transfer what they have learned, but not GuitarHero
Alternate Paul Gilbert speed picking style stuff is more fun to me than sweep picking, and it feels like you're actually doing something, not just being gay. Sweeping sounds so gay. it suits power metal. but these days i like playing smooth blues, you get bored with going fast all the time, even paul gilbert got bored with it.
ive played some rhythm games but not guitar hero and not at that autistic speed. even the fastest guitar stuff requires nowhere near the co-ordination of that. i can play paul gilbert style speed picking and legato hammer-ons in my sleep.
guitar feels like you're channelling something, there is a call and response rhythm to it. i have good creativity but i'm not very co-ordinated to be able to pull off this sort of 'follow the pattern' game. it's too restrictive for my personality. music is not about following instructions, it's about expressing yourself and 'living' it, there is no music being 'played' in guitar hero, you are basically performing patterns to the song which is not what real performance is like. so it's certainly very different in nature.

It would not be possible to play fast if it was mechanically complex. It sounds complex when it's fast, but when it's slow, you see how simple it really is. It's almost like an illusion of complexity, to flourish before the untrained audience.

It's just like what you explain, so much practice allows you to do it with your eyes closed, and the limit on only 5 buttons makes mastery achievement possible, faster and way easier than guitar and their complex hand movements, patterns, style, genre, etc.
But yeah, overall you're right, and from everything you said I understand the feeling that it is restrictive I and get why it may seem too structured and difficult to you, but come on mate, Paul Gilbert, Uli Jon Roth, Ritchie Blackmore, Yngwie Malmsteen even the great SRV delighting us with his blues on 200% speed would look even more complex to the untrained eye.
