LA has news helicopters, almost nowhere else in the US bothers to have them but LA always has because MUH HOLLYWOOD MUH "BEAUTIFUL" BEACH ;) and also is one of the only states with a massive freeway network and not just highways and really stupid rules in the modern age for their cops, meanwhile in other states police chases are ended near immediately and very aggressively.

It does seem like that. I watch some of those car chases on Youtube where people weave in and out of traffic and purposefully get cops to chase them, and the chase is over in a matter of minutes because they lose the police. Either that or the "ghost cars", dudes that drive blacked out Hellcats with their lights off at night time. The chases don't last for more than a few minutes. They seem to only last a minute. It seems like either you lose the cops within that time period, you crash, or they put you into a wall.

It does seem like a good time when the weather gets nice and you have some nice cruising roads around but I just don't want to become a meat crayon

They don't go 250mph, most are electronically limited to 186mph. You'd probably have to remove the limit and regear it to hit 250mph but it would be an absolute death trap. MotoGP bikes hit 227 mph.
