And you’re forgetting that since all MMA fighters are trained, you can basically hold technique constant, and the only difference that will remain is sheer size and natural strength. Which is usually a function of weight, hence weight classes in combat sports.
When I was a kid, my dad took me to karate. My sensei was this 5’3” Armenian guy. 7th degree black belt or something like this, I think these days he’s reached the max degree. He is capable of extremely impressive feats of strength and fighting ability, but there is only so much physical size his lifetime of training can compensate for. Against someone maybe 6’ tall with moderate training, I’m fairly certain he’d lose. And this is someone who possesses the theoretical maximum fighting aptitude, skill, and technique. Scale him up though and he’d be unkillable.
