Seeding a steak properly requires an incredible amount of heat. As such, it creates a lot of smoke and a lot of splatter. Most of this can be mitigated by exhaust vents, but not all of it. It’s a lot less messy to do it outside.

Sir you need to re-season your pan. I can see the bare iron AND rust.

Get some lard or vegetable oil. Warm the pan up. Cover the entire pan in a sticky coat of fat or oil. Put it in the fire so it cooks and absorbs back into the metal.

Wash with only water and a scrubber. I use a chainmail cloth that works great but you can just use a scrubby sponge.

Medium rare steak recipe. Works with even shitty, low fat cuts.

Get meat

Sit out till it reaches room temperature (very important)

Generously salt the top, bottom and sides

Put in the Fridge for 30 mins or so.

Salt gets sucked into the meat and a lot of water trapped inside is released

Pat dry your steaks, the salt is not inside so no need to re-salt. Dry steaks = best steaks

Take a sharp knife and find the gain of the meat (it runs up and down like grains in wood)

Cut shallowly against the grains and make a grid

Add generous amount of pepper and garlic to all sides and pat it gently into the meat

Heat skillet up and melt some lard / clarified butter or similar. Olive/Butter works too but it burns quick and once it turns black it tastes kind of gnarly.

Make sure pan is hot as fuck and there is a good bit of lard etc melted in it

Place steak and -gently- press it so it's flat

Leave it alone for 2 minutes

Flip it over and cook 2 mins

Pick up steak with tongs and sear the sides / if you keep the fat sear it hard so it's good to eat

Take steak out and set aside

Cover with tinfoil to keep heat in because it will continue to cook for a bit / suck the juices back inside itself.

Slice steak against the grain (grid helps with this)

Consume a delicious steak with it's own pooling juices.

Ascend
