Gas, hydro and nuclear produce AC via enormous generators. These AC generators synch phase with each other automatically and form a large virtual phase enforcement pool. Solar uses electronic inverters and these do not sync with each other, causing them to pump phase inverted power into the grid.

Large physical AC generators work like a phase clock pool that inverters sync up against. When the spanish grid went full solar and the last large AC generators disconnected, they lost the clock signal that the solar inverters use and these inverters now start to produce AC power at different rates - one produces AC power at 50.01 hz, another at 49.94 hz and then suddenly everything just breaks apart once they have drifted apart enough. Thats my best guess on how it happened.
