also, i know a guy how has a small commercial orchard and even at that scale he had a couple bins full of apples that he couldn't sell. was giving them away by the 25lb bag to any customers who wanted them. he gives some to food banks and stuff but apparently sometimes you just cant give it all away.

The fuck they will. People used to fill barrels with apples and sink them into cold bodies of water to keep them fresh. They would keep for months, sometimes even a whole year into the next harvest.

With modern refrigeration and an understanding of what causes spoilage, we absolutely could preserve massive quantities of apples.

Not that I recommend it, though. It would be better to sell the apples cheaply for livestock feed, or turn it into apple juice, apple cider, apple sauce, process the peels for natural pectin, etc.

They do this so that the price won't drop from having such a high supply. It's literally cartel tactics made to maintain the cost. They make as much juice, cider, dried apple flakes, etc etc. that people will ever consume.
Sellers know exactly how much they need to sell and process to extract the maximum profit, and selling anymore than that makes the returns smaller.

If they do sell over the demand, the excess will be stored/preserved and resold later. Therefor, the next year, the farmers will not have any buyers to provide for, as they are still stocked up from the last harvest. The economic system in place makes it necessary to waste.
