Nobody in America uses fenugreek that way. Probably 90% or more of Americans don't use fenugreek at all. I've shown fenugreek to Americans and they've smelled it and thought it was weird and were averse to it.
I myself usually prefer it after it's sprouted and become methi leaf, as the Indians call it. Has a nice aroma and flavor, but dissipates easily with heat... gotta use low heat it seems, and probably for short periods. Commercial methi cubes I've tried are low-value and largely flavorless.

In one of european wars, one of generals noticed that in area where potatoes were grown, farmers were not as skiny as they should (confiscation of food from farmers to feed an army was widespread at time). Best thing is, that it often realibly grows in shit climate which often happens in Europe, providing with decent caloritic intake.

Got into using red lentils and split peas as a base for fry-ups to take to lunch. The red lentils are imbued with a distinct smoky flavour I quite like. Nothing distasteful about (and don't make fun of me here because I'm sure there's a spectrum of what I'm about to cast as) Basmati rice... finishes quick... ready for frying-up in some bacon fat.

I've wondered if there's a way when homesteading to make use of potatoes.
Not that I'm homesteading, but the starch could be used for multiple purposes, liquid for potassium, maybe there's a way to avoid some of the calories? So much could probably be useful and recycled or at least composted on a small family farm, apart from just using them as livestock feed. It really just makes you want to get creative and try, but instead I pay $1200/month for an apartment in the city and hate my existence.

I live in Central Florida on the coast. But that's irrelevant because I wouldn't live here if I were growing potatoes or found a better place to live less expensively.
I was just saying, starch from potatoes on a small homestead could be used for things like starching clothes before ironing, or using for other purposes. It's just starch, after all. It has lots of purposes. And you could probably grow far more than you could ever eat on decent land. So you'd have overabundance and think of ways to use them. It'd be interesting. But of course it assumes you have leisure time to do such things. None of us seem to these days, except the lucky NEETs, and I'm not sure a lot of them are in a position financially to buy land and grow crops.

You're half wrong on this one. Both potatoes and white rice are more nutritious than bread, especially american bread. There are a few expensive outliers, but for the most part we have some of the shittiest bread in the world.

Basically, cooked potatoes are highly digestible and your body converts the starches in them to sugar which enters your bloodstream very quickly, causing blood sugar levels to fluctuate, and insulin helps control blood sugar. So it can kick the shit out of your body's ability to maintain blood sugar levels by overstressing your ability to produce insulin or something like that. And then you get fat, go blind, and die or whatever. That's the Reader's Digest version of the whole thing. Oh, and don't forget the limb amputations as your body falls apart. Or whatever. But you know what diabetes is, basically, you just want to avoid getting it. So don't go out of your way to eat bags of refined sugar and all that. It causes problems, and not just for your teeth.
