This wasn't some one-of-a-kind priceless piece of art, it was a dime-a-dozen local shrine statue. The equivalent of the mass produced Jesus statues today. The defaced statue here is actually very evocative and memorable as an artifact and I'm happy we have it today. Nobody would give a second look at the complete statue if it survived, we have tons of identical copies cluttering up museums where bored tourists give them one glance then move on.

People back then idolized these statues to insane degrees. They genuinely considered these statues to be possesed by spirits or demons. Some Christians weren't really okay with worshipping demons so they defaced the suspected statues with crosses to keep the demons away. Not necessarily because they hated the roman art or even the false gods they represented.
Also, defaced statues weren't ancient artifacts when they were defaced, so they didn't really care that much about preserving the history.
