If you really care about your health, then you practice callisthenics (bodyweight/stretching excersises). You can do that everywhere. The most you need for it are a pair of chairs, a towel/broom and either dip bars or a pull-up rack. The latter pieces of gear are cheap and pay off within a year compared to gym subscriptions.

I also encountered beginners who were middle aged, and they have acclimated quickly.

Age is not a limiting factor, limiting factor is stability and strength of your joints and connective tissues, if your join apparatus is
not prepared and on top of that you are overweight - you can get a nasty knee injury, there is a lot of rotational force in martial arts.

So if you want to do martial arts - I recommend you to start with a pre-hab. Start with a "knee ability zero" program
by kneesovertoesguy - he has a good yt channel about conditioning and rehabbing knees.

For general core strength and flexibility I would also start with Pilates and basic stretches. Anatomy Pilates is a good book for it.
Then you go for a general calisthenics training - pull ups, dips, push ups etc.

If you do that for 6 months or better a year - you can go to a judo or a boxing class without a fear of snapping your sht.

As the absolute bare minimum. There are infinite excersises and dozens of variations/progressions to each of them. There are also enough free resources to learn from.
You'll also want to change your diet, especially if you notice that revovery takes too long and if you not only want to get fit, but also build muscles.

Virtually every Yoga channel on youtube provides routines. In my opinion Yoga is in general the best sport for mobility/flexibility as it also teaches you the patience required to perform the excersises with proper technique.
