Dude planes haven't been aerodynamically balanced or stable in flight for like 50+ years now. Software has to correct the control surfaces in a feedback loop many times per second to keep modern fighter jets from dropping out of the air like stones.
The aircraft pretends to be in level flight and you add your inputs to it, but in reality the aircraft is performing a lot of math and adjustments at all times just to keep you flying in a straight line and not crashing instantly.

You can't get the kind of performance we have today with aerodynamically stable aircraft. If you want to make a plane that performs better than one designed in the 1950s you have to use these techniques. It's not optional. Stealth is even worse, look at the F-117a, the thing is basically a lifting body which is the only reason it can fly other than the software. It would crash like a lawn dart if the computers failed for 30 seconds. Probably fly apart too, they have to design the control systems within what's called the 'envelope' which is the combination of lift, thrust, and turning your airframe can endure before the wings rip off and the fuselage comes apart.
Pilots are confined to a software environment designed to prevent this damage so they don't blow up their plane by maneuvering it too crazy, too.

For their weight, they are designed to perform within the envelope. Same with the fuselage and everything else on a plane. You can't just make everything as strong (thicker and heavier) according to whims. And it's useless to design a plane that will knock its pilot out from redout or blackout beyond what a G-suit can prevent, which is already designed to perform within the limits set by the human body. So weight (ie airframe with expected systems and fuel and payload) + how much a dude can endure in a G-suit without passing out defines the limit of performance.

Yep, UAVs will be faster and can maneuver within a broader envelope just simply by leaving the pilot out of the design. Then you can shift the human out of the design specs, their weight, their need to see out of a nice big canopy, etc. And then the problem becomes the lag of the loop when you feed the telemetry to the pilot sitting in a chair under a mountain in Colorado or whatever, and he or she performs the maneuvers, and that information is relayed to the aircraft, and back in that loop.
I can tell you as an amateur musician that I can sense anything more than an 8ms lag between me hitting a key and hearing the sound. I have measured this extensively myself, I've been tinkering with electronic music since the '90s and it was necessary to find this number to set up my system properly in those days. I'm sure a pilot has a similar sense of lag. So get any laggier than 8ms and it starts to suck. FPS games start to suck with a 60ms lag and you have to 'lead' the enemy unnecessarily. 100ms is unplayable.

It's true that from f-16 onwards fighter aircraft now have relaxed stability, but doesn't mean they're unfliable, just that they would be very tiring to control for a human pilot - a p51 mustang with rear fuel tanks will be dynamically unstable until those tanks are empty. The reason an f16 will crash without computers is simply because there is no direct mechanical connection between the flight stick and the control surfaces, but that is true for a naturally stable airbus as well.

To clarify, those Su-27s were Soviet-era planes (the only Flankers sold by the Soviet Union before the collapse) with ancient avionics. Gripen radars saw them from far away so of course they dominated. It would've been an embarrassment if they didn't.
However in that same aerial practice, those ancient Su-27SKs (J-11s) dominated the Gripens in visual range exercises, as well they should.

Because 3d thrust vectoring is not really usefull. It is far heavier. You can correct it with differential vectoring. And it glow a lot, while 2D can is less IR impacting.

Bleeding missiles energy while it is on its flying path. Often meaning you go low in denser atmosphere, which is less favorable for the missile aerodynamic. Also if you do hard manoeuvers at low altitude you can maybe lose the missile or at least create errors that mean the missile will correct it during its flying path over and over, bleeding more energy.
And of course when the missile is diving for you. If you pull lot of Gs left and right, you will most likely create some "annular errors" (dont know how you call it in english) for the missile to completely miss you, because it is less manoeuvrable by now.
If you add the EW, decoy and shit, if you saw the missiles coming, you have great chance to survive.
