Not gonna lie if you just want an easy mode buy a pellet smoker like a Traeger. It’s what I use and it produces a very good product every time with no baby sitting.

This was my most recent rib smoking. I use a Traeger (cheating, I know). Two hours smoked at 225 on one side, two hours smoked at 225 on the other side, 45 minutes to an hour at 325. I spray the ribs with a mixture of 2/3 apple juice and 1/3 apple cider vinegar every 30 minutes. When I’m ready to cook them at 325, I brush a little bit of bbq sauce (locally made, no weird ingredients) on for some extra flavor. I’ve never tried getting a bark, but I’d like to experiment.
